My first experience eating guasacaca sauce was with some friends at a Venezuelan restaurant.

It makes a great sauce with Venezuelan arepas, baked french fries, and even drizzled over your favorite grain bowl or meal prep salad bowl.

The flavor in this guasacaca sauce recipe is much tangier and bright than guacamole without any spiciness.

The parsley and cilantro add in a bit of herb flavor, while the vinegar gives it lots of tanginess similar to lime in guacamole. This Venezuelan green sauce really reminds me of a creamy version of chimichurri sauce.

Guasacaca sauce (wasakaka sauce) is a green sauce that appears in Venezuelan and Dominican food. It is most often served with chicken, grilled foods, arepas, or empanadas.

The preparation differs slightly between the two countries. My recipe is inspired by the classic Venezuelan version of the sauce and sometimes has chilies or hot sauce added to it to make it a bit spicy.

  • Avocado: A fresh, ripe avocado gives the sauce a lovely bright green color and a creamy smooth texture which is why it’s sometimes called Venezuelan avocado sauce.
  • Green bell pepper: While I don’t typically reach for green bell peppers first, it really works in this green sauce recipe. Not only does it help maintain the green color of the sauce, but it also adds its distinct flavor to the sauce.
  • White vinegar: The vinegar is essential when making guasacaca for flavor and its power in keeping the avocado from turning brown quickly.
  • Extra virgin olive oil: While extra virgin olive oil isn’t likely the go-to oil in the traditional preparation of this recipe, it is one of the healthiest oils you can use when preparing salads and sauces that don’t require any cooking.

  1. Place all the ingredients in the blender and blend it up until it’s smooth and creamy.

This guasacaca sauce recipe really delivers bright and fresh flavors of cilantro, parsley, garlic, and vinegar. When added to your meals, it really adds that little something extra.

You can play around when making guasacaca by adding some other ingredients for flavor and transforming it into something a little bit different.

  • Add a little bit of spice: Dice up your favorite chile pepper and add it to the blender. You can also use chile powders such as chipotle chile powder or cayenne pepper to add some heat too.
  • A thinner sauce with more herb flavor: Also, if you really want the flavor of the cilantro, parsley, and garlic to shine through in the guasacaca sauce, your best bet is to decrease the avocado by half.

⭐️ RECIPE NOTE: If you opt for less avocado for a thinner sauce, it will make slightly less sauce. This preparation works great for salads when you want something that will toss more easily with salad greens.

  • It makes a great dip for baked french fries, yucca fries, or cheese sticks! Basically, anything that you can dip is the perfect match for guasacaca sauce.
  • For a little fusion, serve it up with Black Bean Taquitos or Refried Bean Quesadillas instead of salsa or guacamole.
  • On salads as a dressing, I really enjoy it on my Quinoa Taco Salad or on my Meal Prep Nourish Bowl.
  • Adds flavor to vegan burgers or any sandwich really!
  • Use it as an avocado sauce for empanadas! Try them with my vegetarian empanadas or these vegan empanadas from scratch.

Avocados may vary greatly in their size. For the best balance of flavors, you want to use about one cup of avocado when making this recipe.

There’s no need to finely chop the veggies. Just coarsely chop it all up and throw it in the blender and let the blender do all the work.

Measure the cilantro and parsley by pressing the leaves down into the measuring cup or spoon to fill it up. Or you can chop it into small pieces and then measure it.

How long does guasacaca last?

Guasacaca will last in the refrigerator for 3-5 days though it may lose some of its bright green color the longer it sits. The lime slows down the avocado turning brown, but eventually, it will start to change colors.

What’s the difference between guasacaca and guacamole?

Guacamole is a dish from Mexico while guasacaca is from Venezuela and the Dominican Republic.

The ingredients in guacamole include avocado, onions, tomatoes, chile, cilantro, and lime juice and it usually is a bit chunky. Guasacaca sauce contains avocado, vinegar, lime juice, cilantro, parsley, and bell pepper which is blended until it’s smooth.

These two sauces do have a few similarities. Both are green, contain avocado as the main ingredient, and are used as a dip or spread.

  • ½ small onion, quartered
  • ½ small green bell pepper, stemmed, seeded, and roughly chopped
  • 3 cloves garlic
  • ½ cup cilantro leaves, packed in cup, roughly chopped
  • 2 tablespoons parsley leaves, packed in cup, roughly chopped
  • 3 tablespoons white vinegar
  • ½ tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • Salt and freshly ground pepper
